I can’t believe I figured out Hawaiian Sweet rolls! I was playing around with different ingredients for a new loaf of PSMF bread. I made the loaf, took one bite and thought, “That tastes like a Hawaiian sweet roll!” I grabbed my scoop and thought, why not try it. I didn’t even try a trial batch before I turned on the camera, so you get to see the VERY FIRST TRIAL RUN of these guys! I’m so happily surprised it worked! Maybe Maria will see this and make them in Hawaii… I bet they will taste even better! 🤣

Into a dry bowl place:
1/2 cup egg white powder
1/3 cup allulose
2 tbsp nutritional yeast (reduce to 1 T or omit If desired)
1/8 -1/4 tsp quick rise yeast (Omit if desired, this is just for flavor)
1/4 tsp salt
2 tsp cream of tartar
1 tsp xanthan gum (use beef gelatin for a much healthier option! Or omit altogether)

Whisk those together. Add
1 cup liquid egg whites. (OPTIONAL: Add 1/4-1/2 tsp Pineapple Extract to the liquid egg whites)

Stir to combine. Beat on high till stiff peaks form. Turn the speed down to half, and slowly add

5 egg yolks, one at a time. If the batter starts to fall, stop at 3 yolks. I turn the speed back up for just a few seconds to fully incorporate.

Cover a baking sheet with parchment paper and spray with nonstick oil. Ypu can spray your scoop (1/4 cup, 2 Tbsp, 2 oz scoop!) with oil, inside and out. Scoop batter onto the pan with the rolls barely touching. Bake at 325 for 15 minutes then turn off the oven. Set a timer for at least 15 minutes and let them sit in the oven till it goes off. Remove and eat the WHOLE PAN!

  3. Has anyone tried using egg yolk powder instead of whole egg yolks? I have a bag of it in my cabinet and have used it successfully in other recipes.With the price of eggs these days I would prefer to use the powdered egg yolks before they expire.     I want to make these, and I hope you can help me. My PSMF breads seem too light, I keep them in the oven a bit longer and then they are too dark and go flat.

    I just ordered the pineapple extract with your link. My rolls don’t have that golden color yours do. Should I shut the oven off when they are still light? Will the time with the oven off get my rolls to the golden color?

  8. Oh, I definitely didn't beat mine long enough. It seemed like it was pretty stiff…but became so soft by the time I was done that it was more like pancake batter. They are baking in the oven…not sure how they will turn out. But I'm hopeful.

  10. Amy! I made the Hawaiian Sweet Rolls yesterday, but I made them large, like a hamburger bun. We were going to a local BBQ place that has delicious smoked meat, so I wanted a sandwich size bun. I did not have the pineapple extract, which I thought I had, so after ordering the pineapple, I decided I was going to try it with Orange extract. They were sooooo good! I took along my sugar free BBQ sauce and we had our little picnic! Tonight I sliced open one of my large buns and sliced up some strawberries and made a little sugar free whipping cream. It was so delicious! Thank you, thank you, thank you!! My pineapple extract will be coming tomorrow, so I am looking forward to making more with that!

  12. Hi I was wondering if you’ve ever used Lorann emulsion instead of the extract for the pineapple? The emulsion is supposed to be an intensified version for baking so you don’t have to use as much?

  14. WOW! Finally made these today! In addition to pineapple I added a little caramel stevia as well and added Janet Greta’s cream cheese cross bun topping. Holy Cow, I ate 3 already. The batter whipped up quickly and made 12 with a larger scoop. Perfect for an Easter holiday weekend. Soft, delicious and absolutely NO styrofoam texture.   17. I modified this recipe to make hot cross buns! OMG! Added 1/8 tsp cloves, 1/8 tsp nutmeg, 1/2 tsp cinnamon and about 3 Tbsp of swerve brown sugar to your mixture and mixed. Then stirred in half an orange zest along with about 1 Tbsp of finely minced raisins. Probably worked out to half to quarter of one raisin per bun. And topped with swerve icing sugar, cream and vanilla with a few dashes of cinnamon. Delicious!

I’m wondering what I did wrong about the texture—they flattened a little after I pulled them out of the oven and the bottoms rose up, this made them a little dense. Do I need to pay more attention to the texture when whipping? Or is there something else I need to do?

    As half Portuguese I grew up on my Nana’s sweet bread. That is one thing I miss most being keto…

  23. They taste fantastic! I forgot to leave them in the turned off oven for 15 minutes, so they deflated a little and probably could have used the extra cooking time, but regardless of my screw up, they are awesome. The macros are great too!

  26. I tried these, they did not brown, I left them in longer (probably an altitude issue) and left them in the oven for the additional time but they are flat. Any ideas??? Desperate! I want to make for Easter.

  27. I made these today, just halved the amount of nutritional yeast (I don't really like it in my meals) and didn't have the pineapple or other essence. I used a standard ice cream scoop and got 10 buns about a burger bun size. Once they cooled down, they became quite flat, so I'll try to whip the egg whites longer next time (as you advised others with the same issue). They taste a bit too eggy with just butter, BUT! With cream cheese, ham, Havarti cheese, tomato and a good amount of mayo, all egg taste was gone, and I enjoyed my first delicious sandwich in more than 5 years!!! Thank you!!! Sandwiches are now back on the menu, YAY!!!

  29. I just made these and forgot to add egg yolks to the batter! They still came out ok, still edible. I cooked some shredded cheese into 4 of them because I saw cheese buns at Costco. They look similar.
