Serving Size: 2-3

Ingredients:
1 lb bag of cauli-rice
1 lb shrimp
1/4 cup mixed veggies
2 eggs (you can use 1 as well)
1/4 tsp ground ginger
1 tsp garlic
1 1/2 tbsp soy sauce or coconut aminos
1 tsp sesame oil
1/4 cup oil
Garnish with cilantro or green onion

Directions:
1. Take your frozen bagged cauli-rice and put it in the microwave for 3 minutes.
2. Take out and cut a corner of the bag to drain out all the water. You want to squeeze as much as possible and get all of the water out. Set aside. This is the quickest and easiest way to get fluffy rice.
3. In a pan, turn on medium high heat and add your oil. Cook your shrimp for 1 minute on each side and take them out, placing them on a plate lined with paper towels.
4. Now, take 1-2 tbsps oil out, you’ll be saving this for the eggs. Saute your veggies until tender and translucent.
5. Add your cauli-rice and cook until nice and fluffy. Add your soy sauce, sesame oil, ginger and garlic at this time.
6. Now, push the fried rice to the side and make space for your eggs. Add 1 tbsp oil back to your pan and cook your eggs. Add a dash of salt and pepper to season.
7. Now, mix in with the fried rice and add back your shrimp. Stir fry for 2-3 minutes and you’re done! Garnish with green onion or cilantro and enjoy!

I learned the hard way when I tried making the keto hawaiian type bread and did not follow the order of the steps and it did not rise as it was supposed to.
