Hi, everyone!
In this first video, we are introducing our everyday bread which is made with lupin flour,
and seeds are added for that extra nutty flavour.

This is a super mega sized bread and the TOTAL NET CARB for the entire loaf is 49.3g

*IMPORTANT – You may need to knead the dough longer than what I do as it works differently for every condition. The dough will only rise when sufficient gluten has developed and a simple windowpane test can be done to see if the dough is kneaded enough.

INGREDIENTS

WET INGREDIENTS
450ml (+ -) warm water (38 – 42C)
1 tsp honey (feed for the yeast)
13g (4tsp) dry instant yeast
Mix all and leave for 5 – 10 minutes.

DRY INGREDIENTS
160g (2C) lupin flour
230g (1&1/4C +3TBSP+1tsp) vital wheat gluten flour
100g (1C) extra fine flaxseed meal
60g (3/4C) oat fibre
20-30g (2 – 3 TBSP) sweetener of your choice
2 – 2.5 tsp salt

*I only use oat fibre for its 0 carb content, if you wish to skip it, more VWG and lupin flour can be added, or replace with almond flour.

1 Cup of mixed sunflower and pumpkin seeds

3 eggs (room temperature)

60g (4TBSP) softened salted butter

* First proofing : 60 – 90 minutes
Second proofing : 30 – 45 minutes

This is a large bread so you’ll need a 5.5 inch x 9.5 inch sized bread pan.
Bake at 180C(350F) for 1 hour

* If you’re allergic to peanuts then lupin flour is not for you.

I just made this bread, it is the best I ever made, so fluffy and I was able to bend/fold it like you do in the video! it was huge so I cut it in 2; and baked them for 45 minutes at 350 F. it has a very little bitter taste, which I think is the lupin flour, I don't mind it at all, I just had 3 slices without even toasting them 😳 …. Thanks a lot for this perfection !!!!

  2. Hola Buenos días!!! La harina de lupino que he adquirido tiene 7,9 de hidratos y 7.9 de azucares no creéis qué es mucha azúcar para una dieta keto?? En vuestra receta tiene 160 gramos de lupino,me saldría muy alta en azucares

  3. I did it and is so amazing, taste so good and love the texture. I just had a problem. I roll the mix to put it inside the pan like you, but did a loop inside the bread and make appart every slice. Next time I will not roll it to see what happen. Now I would like to edit the recipe to make it cinnamon bread 🤤🤤🤤 I would appreciate if you do it 🤩❣

  7. 저는 빵이 잘 안 부풀어요. 발효할 때 드라이한 곳에서 한다고 써 있는데 원래 습도가 높아야 잘 부풀지 안 나요? 이스트가 죽었는지 전혀 안 부풀어서 돌 된 빵만 3개를 만들었네요. 원인이 뭘까요?
    빵 잘 부풀리는 방법 좀 알려주세요.

  8. That cup of seeds has approx 22 grams of net carbs.
    I don’t like bread with seeds, so do you think this bread
    is ok without them? Leaving them out would make a huge
    difference to the macros.

  9. Hi! I made the bread today, I measured everything with a scale but my dough went flat when I put it in the oven. I have no idea what happened. The bread is very delicious but it was just flat. Any ideas to what might have happened. I did follow the instructions. Thank you

  14. Made this today. It is so good! I forgot to score it so it didn't expand as much on top but it is delicious. Crispy top and chew is just like high carb bread! I love sunflower and pumpkin seeds in bread-Thanks so much for this recipe. I will definitely be making it again and again.

I made this recipe and the flavor was bitter, I thought it might be the vital wheat gluten amount, but after thinking about it I realized I purchased a different brand of lupin flour than I normally buy. I am pretty sure this was the problem. Not sure if you had others comment on bad taste. I recommend the Lupina brand, no bitter taste with that one.
