In this video, we’re going to teach you how to make low-carb blueberry mini muffin bites. If you’re on a low-carb diet weight loss journey, this is a fantastic keto-friendly low-carb recipe for muffin bites that you can have as a healthy treat when you really need one.

Right now, there is a craze called mug cakes. It’s a really cool concept that you have a small number of ingredients that you mix in mug and pop in the microwave to have as a single serving cake. This is a cool theory, but it relies on a microwave, which we don’t feel good about using.

These recipes turn out way better in the oven over the microwave anyway. We also realized that having a mug full of cake was just too much. So, we made these muffin bites that are perfectly proportioned, they don’t have regular sugar or flour, and they’re delicious!

  1. QUESTION???ย
You don't 'grease' the tins or use paper cups? It seems they would stick and be a b*tch to get out.

  2. I don't like microwaves. Not good for you it takes out the good energy from your food.
    Thank you x

  3. Looks great but if I made a bigger batch of these, could I freeze them. I live alone and cant have all those yummies sitting around!

  4. Thank you Karen and Dr. B for all your amazing recipes…I tired this muffin and it has great flavor. the only thing I would change is the amount of sweetener, its just to sweet for me.

  5. Would like to try this recipe, but can't find the almond flour – even in my bulk food organic store. I think I would insert the same number of blueberries into each muffin after the batter was in the cupcake pan. Knowing me, I'd end up with all the blueberries concentrated into two or 3 muffins and none in the rest:)

  6. 2:16 You said "No Sugar, No Flour". Almond flour has 163 Calories per oz, regular white flour has 102 per oz! You claim it is low sugar but in fact it is highly glycemic… I dare you to show the real glycemic number for each muffin!

  7. Loved these. Mini cake bites are ingenious. I am sensitive to almond flour if I eat too much so these work great. They are so good too.

  8. I would love to come over to your place to eat those delicious looking muffins and to have a 3 way.

  9. When you put blueberries in the oven for half an hour how much does GI rise? A can not find that info in internet. DO you have that info? Because latelly I eat for breakfast one large muffin from coconut and almond flour and with blueberries and I don't know if that berries become sugar bomb when baked for 30 min in the oven.

  10. These were great. I used the small New England blueberries and upped it to 1/4 cup. They were terrific.

  11. I made a mug cake once..out of curiosity .. & in a microwave…..blah…I don't know what all the hype is about it was nasty.these mini muffins look delicious, definitely going to try them out .thank you for sharing .

  12. I find it's best to wait until the blueberry ar at peek ripeness. A few days into refrigerator or so. The natural sugars pop. Amazing.

  13. I am doing the same muffins for a few months now without cinnamon. LArger portions but I have 1 muffin for 1 meal. So I do not eat them as a treat.

  14. wow, that looks amazing. But since I've been on keto I seriously don't crave sweets but I will try to make this one day. Plus I just bought the most amazing blackberries that I can use instead of blueberries! Thank you so much!

  15. Love your cooking vids…but your recipe page lists some different ingredients & measurements. Cinnamon not there, ghee or butter – not coconut oil, 1tbs not tsp; almond milk – 1tbs, but tsp. I'd like to cook these but too many times I get recipes from YouTube that totally muck up if there are contradictions. Sorry for the rant. Can you correct? Or at least make a note on your vid or page? Thanks! ๐Ÿ˜ฌ

  18. Awww I love u guys I want to like this video a million zillion times and of course am going to make some mug cakes ๐Ÿ‘๐Ÿ‘๐Ÿ‘

  19. What a great idea – turning mug cake into mini muffins! Why didn't I think of that?! I can't wait to try this. I know it will be delicious. It seems that it's the simple things that are the best ideas. Thank you!
