With the forth of July around the corner I wanted to bring you a dish that is delicious and keto friendly! My take of the popular macaroni and cheese with a lot less carbs!
Keto Connect’s Recipe:
1 Tablespoon of Butter
1/2 Cup Heavy Whipping Cream
2 oz Cream Cheese (you can play around with different flavor cream cheese)
2 cups Cheese (I used a Cheddar/ Mozzarella blend) – Save 1/2 cup for top
2 12 oz bag Cauliflower (Thawed)
Seasoning to taste (I used Salt, pepper, onion powder, garlic powder, cayenne pepper🌶 )
Splash of Chicken Broth (optional)
Melt butter, heavy cream, and cream cheese in a sauce pan on a medium low heat. Once melted add your cheese half at a time. If you your mixture is too thick add a splash of chicken broth.
Next add the thawed bags of cauliflower in a oven safe dish.
Pour cheese sauce on top of cauliflower and stir to combined. The cheese sauce will become thick because the cauliflower is cold. It’s fine it will melt while in the oven.
Place dish in the a 400 degree oven. It took about 30 mins for mine to get golden on top. But I would start checking it after 20 mins. (If your top does not get brown hit it under the broil for a couple of minutes)
Once out of the oven let cool for at least 10 mins and you have yourself a perfect side dish for the holidays. I cook this all the time as one of me meal prep side dishes.
