1/2 cup (50g) blanched almond flour
1 tablespoon (15g) unsweetened cocoa powder
(I used unsweetened black cocoa powder)
3 tablespoons(35g) powdered erythritol
3 tablespoons (43g) melted salted butter

-Blueberry Purée-
130g fresh blueberries
2 tablespoons (30g) granulated erythritol
1 teaspoon lemon juice
2 tablespoons (30ml) water
1/2 teaspoon (2g) unflavored powdered gelatine

-Cheesecake Filling-
200g softened cream cheese
1/4 cup (50g) powdered erythritol
50g plain yogurt or sour cream
2 tablespoons (30ml) cold unsweetened almond milk
2 teaspoons (8g) unflavored powdered gelatine
200ml heavy whipping cream
1 teaspoon (4g) lemon juice

* you can always adjust the sweetener according to your taste

Gracias por compartir, siempre es un placer ver tus videos..hice es cheesecake, queda muy rico de sabor pero no me termina de quedar bien El Paso de cuando agregó la gelatina a la mezcla de queso y crema, apenas la agrego empiezan a aparecer grumos y luego del tiempo en el refri se pueden ver pequeños trozos de gelatina. La segunda vez intenté poniendo un poco de la mezcla de queso en la gelatina y luego todo a la mezcla de queso disminuyeron los grumos pero igual quedaron unos poquitos…tienen algún consejo para este paso? Te lo agradecería montón! ☺️ y gracias denuevo por todas tus recetas

    I would like to make it for someone vegetarian. So I won't be able to use the gelatine. I'm thinking of replacing it with agar-agar. Would you know if that would work?

  17. What kind of gelatin did you use? I used knox gelatin and it did not seem to incorporate as well. Should knox gelatin be bloomed the same way as in recipe? The part that I mixed with the almond milk, microwaved for 10sec, by the time I was done whipping cream it was a solid block. so I added some more almond milk and microwaved again. it never mixed in with the cream cheese mixture right though, was chunky. were my other ingredients to warm maybe? or do I need to use different gelatin
