Cheesecake is one of those recipes that can be intimidating but it doesn’t have to be. Making cheesecake at home can be super simple with the right technique and attention to detail. In this post I’m going to show you how to make the best cheesecake ever with step-by-step instructions.
BETTER THAN CHEESE CAKE FACTORY…..KETO CHEESE CAKE
Crust Ingredients
6 Tbs unsalted butter, melted, cooled, plus more to grease the pan
1 ¼ C almond flour
½ C pecans, chopped
¼ C Monk Fruit Baking Powder
Directions for the Crust
Preheat the oven to 350* and position the oven rack in the middle position
Use the extra butter to generously grease a spring form pan or a cake pan of your choosing
Using a food processor, chopped the pecans into small pieces
Add the almond flour, Monk Fruit Baking Powder, melted butter to the pecans
Pulse until the mixture forms a dough ball, put this into your cake pan
Using the back of your fingers or a measuring cup, press this out and up the sides, about 1”
Bake this for 10m and let cool completely
Reduce the oven temperature to 325*
Filling Ingredients
1 ¾ C Monk Fruit Baking Powder
5 – 8oz cream cheese, room temp
1 Tbs lemon juice
1 ½ tsp vanilla extract
3 large eggs, room temp
Directions for the Filling
Using a handheld mixer or a stand mixer, put the Monk Fruit Baking Powder, cream cheese, lemon juice and vanilla, and mix this until smooth
Add the eggs, one at a time, incorporating them thoroughly
Scrape the mixture into the pan with the crust and tap the pan on the counter to even the mixture and take out any air bubbles
Bake this until the edges of the cake is set but the center is still jiggly, this should be about 50min
Sit the cake on a trivet and run a thin knife around the edges of the cake. Let it sit and cool for 1 hour
Loosely cover the cheesecake and refrigerate it at least 4 hours before serving
Release the cheesecake from the spring form pan, if using one
Cut slices and enjoy as much as you want without any of the guilt of sugar!!

Does this have an aftertaste like some monk fruit sweeteners do? I tried the one from Lankanto and it left an awful tin flavor in my mouth for hours.

Calling the monkfruit powdered sweetener baking powder makes it confusing .If I wasn't able to watch the video, even the way the ingredients are written, it calls for baking powder which would completely change the consistancy of the cheese cake. It would be better to call it monkfruit powdered sweetener like it's written in the package.
