I’ve been playing around with a lot of thickeners, emulsifiers and hydrocolloids lately and I just found one that not only creates super creamy ice cream, but it also makes insanely easy pudding and flan. That ingredient is tara gum. This works on ANY ice cream recipe, whether keto or not, and works with any ice cream maker/process.

  4. Has anyone tried anything other than Keto Chow which I am totally against since they put sucralose in their products? IMO, not keto! Maybe flavored protein powder? I'm interested in just the pudding or flan.

  6. The tara gum interests me. I do find xanthum gum slimey so can I incorporate tara gum without heating the base? And if im making vanilla can I use your butter and water idea instead of milk?

  7. Hello! I am so loving Serious Keto!! So down-to-earth and comfortable to watch … and so REAL and friendly … you AND your family members. Regarding the addition of Tara Gum to ANY ice cream recipe … if were to use the Kroger CarbMaster Fat Free milk, which is non-fat, will the Tara Gum still be of benefit? Along with making it less icy, would it also help make it creamy even with no fat content? I probably should just pull the level on this and do it, but I’m on a limited budget and am hoping to avoid too many misadventures with making my own ice cream. Appreciate you help!

  10. I love the texture ! Im kinda bummed though ! I bought a lot of keto chow and the creami and I was in heaven after adding the tara gum. Of course I dont have this kind of luck LOL I started having digestive issues with keto chow. I tried the process os elimination to come to the conclusion I have a severe (spend the whole day in the bathroom) Syndrome consuming succralose. I figured ok no biggie Ill just look for keto icecream recipes and use my creami. To my suprise there wasnt a decent recipe i like and im not picky. I would like to request some none keto chow icecream for my creami. Thank you in advance if its possible. Btw I love your channel !!

  12. On your first Ninja Creami video you used coconut milk in place of water. Not necessary with Tara gum? I just got a Creami. Excited to do some Keto Chow ice cream.

  13. I added 1/2 tsp into my ice cream, but I think it may have been too much. My ketones were lower, weight was up, and I've got an ulcer in my mouth. I'm cutting back to 1/8 tsp.

  14. I've made two batches of homemade ice cream both using Tara Gum. The first one was perfect. The second batch I strained and saw a gelatinous film in the strainer. Had no idea what it was. After my ice cream turned out…well, icy, I realized that film was the Tara Gum. Lol. That lack of TG made a huge difference. I just completed the base for my 3rd batch and not only did I not strain it, I mixed the TG into the sweetener before adding the sweetener to my milk and cream mixture.

    It's already super thick and creamy! I can't wait to put it in my machine tomorrow. (I let my base mellow overnight.)

    Anyway, thank you so much for introducing me to Tara Gum. It's a wonder product .

It may be important to highlight if the base needs to be warm enough for the tara gum too mix properly, at least that's the impression I got after watching the modernist pantry video on tara gum. I made mine with heavy crream (and slightly warm water) so may not be so creamy If the base wasn't warm enough to activate the tara gum. I'll have to compare it with adding to warmer keto chow with melted butter.

  19. The most consistent thing I can say about my first few months doing keto is that I really need to expect to experience some dumpster fires among my recipe and cooking successes. To further complicate matters, I am 57 and teaching myself to cook. Yeah, it's not a typo. Let's not speculate how I've subsisted all these years, let's just say it could have been a really hefty retirement vehicle earning buttloads of money right now. So, I heard this magical keto chow being praised by many keto creators and utilized to make some really righteous looking ice cream and shakes. I read the flavors in the sampler and bought that shizzle immediately. When I poured it into my fat of choice it smelled exactly like the "instant breakfast" I loved as a kid. Nothing prepared me for the smack yo' face salt lick that followed. I should have known that would be the case, since the product's most basic use is for a meal replacement and keto comes with concerns about sodium depletion. I am going to have to chalk this one up to "caveat emptor", as I was taught by The Brady Bunch at the ripe old age of 10. Luckily I didn't spend $100 on the Keto Chow like Greg did on that clunker of a car. Onward and upward, and serious(see what I did there) thanks for all your amazing keto experiments and recipes that have taught me so much over the last few months. The Keto Chow debacle was my own damn fault!
