I prefer making this cauliflower mac n cheese over regular mac n cheese because it’s actually easier and I don’t have to wait so long to cook the noodles. Cauliflower steams faster than it takes to boil noodles.

KETO CAULIFLOWER MAC & CHEESE
Serves: 4
1 pound cauliflower florets
3 tablespoons almond flour
3 tablespoons butter
1 cup heavy cream
1 teaspoon salt
6 oz sharp cheddar cheese, shredded
3 oz gruyere cheese, shredded

1️⃣ 00:21 – To a large stockpot, place a steamer basket into the pot and fill the pot with 1 inch of water. Bring to a boil. Add the cauliflower florets to the steamer basket, cover and let steam for 3-5 minutes or until cauliflower is fork tender. Remove from heat and any water and set aside.
2️⃣ 00:48 – To a medium sauce pan, melt butter over medium heat. Sprinkle in almond flour and stir for 30 seconds.
3️⃣ 01:19 – Slowly add heavy cream while stirring constantly. Add salt. Let mixture come to a boil and let simmer for 5-7 minutes or until mixture has thickened enough to coat the back of a spoon.
4️⃣ 01:58 – Once cream base has thickened, slowly add in shredded cheese, adding in a handful at a time and stirring until smooth. Continue until all the cheese has melted and cheese sauce is smooth and creamy. Remove from heat.
5️⃣ 03:14 – Add cauliflower florets into the cheese sauce and stir until florets are well coated. Serve immediately.

  7. Gruyère is (close to) impossible to English speakers because is a combination of difficulties, the R, the U, the Y ( two I in combination with the U and the R after!) the R again. Then don't worry. I need to give you my very easy French recipe for cauliflower: cook the flowers on steam, al dente, pour it into a big bowl, crash it a little beat with a fork, in another bowl mix 250 or more of sour cream with a cup of fresh grated parmesan plus a pinch of salt, pour this on the cauliflower, gently mix it, pour in a backing dish and put it on the oven (180 degree) for 20 minutes. Very simple, easy and tasty. In France we traditionally make it with a béchamel gravy and sometime put eggs boiled cut in two in this gratin, I make it to with my recipe and then it's a complet meal. Luckily, I Love most vegetables, including Cauli, and made properly, Cauli mash is so close to mashed potatoes (unless you REALLY hate Cauli ).
