80kcal / 1g net carbs / 0g sugar / 7g fat / 2g protein

These chewy and dense oatmeal cookies have a super yummy oatmeal flavor thanks to the low-carb OAT FIBER in them, so feel free to leave out the extra 1/4 c. of rolled oats if you don’t want the extra half a gram of net carbs in each cookie.

Question, have you ever baked with pecan butter and pecan flour? I am addicted to the flavor of pecans and have not found any good pecan cookie recipes. Their net carbs are ideal. Are they (Pecan butter and/or pecan flour) complicated to bake cookies with?
