This sausage and kale soup recipe puts the essence of Italy right in your bowl. Flavors of sweet Italian sausage mingle with savory herbs and garlic. 1 lb. sweet Italian sausage, ground
1 Tbsp. butter
1 medium yellow onion, chopped
1 medium carrot, peeled and diced
2 cloves garlic, crushed
2 tbsp. red wine vinegar
1 tsp. dried oregano
1 tsp. dried basil
1 tsp. dried rubbed sage
¼ – ½ tsp. crushed red pepper flakes
4 cups low-sodium chicken broth
1 cup heavy whipping cream
½ medium head cauliflower, cut into small florets
3 cups kale, chopped
½ – 1 tsp. sea salt, or to taste
½ tsp. freshly ground black pepper

  11. Basically, this is a keto version of Zuppa Tuscana from Olive Garden. I prefer making it with cauliflower cut from the stems. It feels more like the original potato ingredient.

  12. low carb, sure but this doesn't have enough fat and protein ratio to carbs to be anywhere near keto. f:4/p:3/c:1 — triple the the cream, used bullion instead of broth, double the meat, why would you use low sodium chicken broth and then add salt… also, season your own sausage from scratch leaving out the brown sugar.

  13. OH this will be a nice keto substitute for my sausage & potato soup. (Which I miss DEARLY!) But I use hot Italian sausage.
