These eggs are so rich and perfet for a ketogenic diet!

Keto Sous Vide Eggs

Ingredients:
6 lg eggs
1/2 cup (110g) full fat cottage cheese
3 oz Kerrygold Dubliner cheese (shaved)
salt and pepper

instructions:
Place all ingredients in a blender, blend completely smooth.
spray mini mason jars and divide mixture amongst the 6 containers.
Place the jars (with sealed lids… tons close too tight but want them air tight) in a pot of water and fill with water until the egg level is reached in the jars. Bring to a near boil then reduce heat to low for an hour until the eggs are set. I prefer my water temp around 170-175 degrees F.

  1. I tried making eggs like this and twice the lower part of the jar broke, it made a big pop noise and the water circulator was circulating egg mixture and water. Iā€™m guessing in some cases you should warm up the jars in hot tap water first before putting them in the water bath.

  2. Try adding a splash of hot sauce…some dried tarragon (go easy) and parsley. If you want to bump up the fat content you can add 2-3 tbsp of heavy cream also. BTW…Gruyere cheese is just a form of swiss cheese so you can use that or any stronger flavored cheese. Something mild like colbyjack really isn't going to add much flavor. Dubliner is great cheese.

  8. Looks delicious. May I ask, what brand is the cheese grater? It looks sharp. I keep buying them and the cheese just gets stuck because the blades aren't sharp. Also what brand of thermometer is that? I've seen you use it before and I need to get one as it seems like it comes in handy.
