THE BEST CHEWY KETO PEANUT BUTTER COOKIES ARE HERE!!!

My second favorite cookie in the world is the Peanut Butter Cookie! First is chocolate chip, of course. I created this keto cookie recipe for all of my peanut butter fans out there. And the best part….these keto peanut butter cookies are CHEWY!!!!! And the second best part….you can use any nut butter and nuts in this keto recipe. You don’t have to settle for peanuts or peanut butter (especially good if you are watching your carb count). I have used almond butter, peanut butter, and a mixture of nut butters in this keto cookie recipe. They all work! And they are all delicious!

KETO PEANUT BUTTER COOKIES

1 cup almond flour
½ tablespoon beef gelatin
½ teaspoon baking powder
¼ teaspoon baking soda
⅛ teaspoon salt
¾ cup roasted salted peanuts or nuts of choice
3 tablespoons unsalted butter, softened
¼ cup Lakanto golden monkfruit
3 tablespoons Swerve
¼ cup almond butter or nut butter of choice
1 egg
½ teaspoon vanilla
In a small bowl, whisk together almond flour, gelatin, baking powder, baking soda, and salt. Set aside.
Grind the peanuts using a food processor or mini blender until they have a course breadcrumb appearance.
Cream together butter and sweeteners until combined using an electric mixer. Beat in the almond butter, egg and vanilla. Gently stir in the dry ingredients into the nut butter mixture.
Stir in the ground peanuts until combined.
Roll the cookie dough into a 1 inch ball and place on a parchment lined baking tray. Press the cookies down with the back of a fork to make a crisscross pattern.
Bake at 350 degrees for 8 minutes. Let cool on baking tray for 5 minutes before transferring to cooling rack.

  5. Can you show me how to make a gluten free low carb bread. I have Celiac disease and my cardiologist has sent me to a Dr Poon here in Canada. He’s a metabolic specialist. I need to loose weight quickly bc I’ve developed a heart condition. Every year for the passed 6 years I’ve been diagnosed with life threatening problems. I’ve never smoked but I have COPD, I have only one kidney that works, I have Hashimoto disease, my bladder shut down so I need to wear diapers and it doesn’t empty completely so I need to use a catheter every 4 hours. The latest thing is cluster seizures in the brain. I don’t fall down and shake but it’s like misfirings in the brain. I’ve lived with back and leg pain for years but I find the TENS machine helps better than pain meds. I don’t have a bread machine but I do have a kitchen aid mixer. Please help me if it’s not to much work. I would so appreciate it. Yours truly Susan Roberts. 💝😺

  6. Hi Ketoconnect, I appreciate the recipe. Two questions: 1) Do I have to use two types of sweeteners? I have Pyure, an Erythrtol + Stevia blend, and also Trivia, but haven't used it bcuz I'm unsure about the added cane sugar in it. 2) Can I use unflavored gelatin instead of beef gelatin? Thanks for your reply.

  7. Too much sugar substitutes causes sweet food cravings worse than with normal sugar 😫 not a good idea for Keto.

  13. I'm curious – why the additional baking soda? I've seen people using both powder and soda before but I don't really get why. I'm not convinced there's sufficient cream of tartar in the powder to activate the additional soda. Presumably I'm wrong about that.
